Dr. Esther Garrido Gamarro is a nutritionist and food scientist with 18 years of experience in food safety and quality. She has worked for the past 14 years as a Fishery Officer in the Fisheries and Aquaculture Division of FAO in Rome, where she contributes to the development of international standards, including those of the Codex Alimentarius, by providing scientific advice on the safety and quality of aquatic products. Throughout her career, she has supported global cooperation programmes aimed at strengthening food safety systems in the aquatic sector, thereby enhancing food security and nutrition. Prior to joining FAO, she worked in the private sector in production, food safety, quality management, and certification. She holds a PhD in Science and an MSc in Food Quality, along with two BSc degrees: one in Human Nutrition and Dietetics, and another in Food Science and Technology.
